The Butcher Arrives

February saw the arrival and first time visit of  my husband Peter. 

He arrived via Ascension Island which was quite a shock to the system having been in zero temperatures in the UK and landing in 32 degrees of sunshine on Ascension. 

It takes almost three days on the ship from Ascension Island to St Helena and in that time Peter managed to acclimatise himself to the warm weather.

Within three days of arriving in St Helena Peter was helping me with the restaurant and giving butchery demos to the students and
some of the local butchers. 

As there is a shortage of local meat on the island, most animals are slaughtered and butchered in the same week.  A lot of meat here is sold on the bone which the locals love.  

Peter did a demonstration of cutting up half a pig and the variety of cuts which could be taken. 
Following on from this he also visited the local butchery and worked alongside the local team.  

The three weeks he was on the island went really
quickly for all concerned and I hope he is able to return soon.
